Daring David From Hog Roast Birchwood

David is Hog Roast Birchwood’s catering manager. Why is he daring? Because he dares to try different flavours and ways of cooking to make Hog Roast Birchwood’s menu’s full of flavourful and delicious food. A few years ago, he swooped his life as a prison guard to follow his passion for cooking by joining Hog Roast Birchwood. He particularly enjoys this work as it is a family-run affair, he loves doing jobs with his daughter who shares her father’s passion for flavours and presenting the food beautifully. You will certainly receive tasty food with friendly service with this duo. 

David was asked some questions so you can get to know his experience with the company.

What are you most looking forward to this season?

After the year with covid, I’m looking forward to going out and helping the customers enjoy their well-deserved events. I’m excited about going to the different venues and meeting all the people of Cheshire as the face-to-face interactions have been missed!

What has been your most memorable event so far this year?

Having turned up with a hog roast rather than the customers expected spit-roast as we can do either!  I had completely changed their view of the hog roast by the end of the event though! You don’t lose the theatre aspect of the whole pig with a hog roast as it still gets lifted for your guests to see and I strategically carve the pig so that the side on view is in full tact while serving. Because it is cooked in the tray rather than on the pole, the juices get absorbed back into the meat creating the most succulent pulled pork. Having the stuffing around the pig that is made from the meat’s juices, provides an exciting medieval vibe, with just the apple in the mouth missing! The hosts absolutely loved the hog and appreciated how we were with their guests. 

Which menu would you recommend?

Anything with a hog! The classic hog roast may seem simple, however the way the pig is slowly roasted and the flavouring of the stuffing with the crunchy crackling served in a selection of rolls with a selection of sauces just provides the most satisfying dish.
